Because of the unique Pitco fry tank design, carbonisation and taste-transfer are dramatically reduced because of the larger ?cool zone? to capture the natural fall-off that occurs during frying. Costly oil breakdown is also avoided. Optional filtration also helps to ensure that the oil is in perfect condition for cooking, for a lot longer.
